Here is my personal favorite version of an apple pie!

What you need:

Base:

100 g butter or margarine

3/4 dl sugar

1 egg

1 teaspoon of baking powder (FI leivinjauhe)

2 1/2 dl wheat flour (FI vehnäjauho)

 

Crumb mix:

50 g butter

1/2 dl sugar

1 dl wheat flour

 

On top:

1 dl sugar

1/2 teaspoon of cinnamon (FI kaneli)

1/2 teaspoon of ground cardamom (FI jauhettu kardemumma)

 

Whisk soft butter or margarine and sugar. Add the egg, skimming well. Add flour-baking powder mixture. Stir the dough quickly until smooth. Press the dough with floured hands into the bottom and sides of a low pie pan (Ø 25 cm)

 

Use 5-7 sour apples for filling. Peel the apples, remove the husk and cut the apples into blocks. Arrange the blocks beautifully on the dough. Sprinkle with 1 dl sugar, 1/2 teaspoon cinnamon and 1/2 teaspoon ground cardamom. Mix the ingredients of the crumb mixture and sprinkle the crumbs evenly over the filling. Bake at 200 on the lower level in the oven for about 25 minutes. Serve warm pie with custard.
